Each piece gets rolled into a cylinder and then placed close together on the baking sheet in two groups of four so they rise up against each other instead of spreading out. My first test I didn't do this and the hot dog buns were a little bit sad and flat, so highly recommend doing this. After the egg wash, I topped these with poppy seeds because I love a Chicago-style dog, and then bake them until golden. These gluten-free hot dog buns are soft, sturdy, and built to be loaded with as many toppings as you want without falling apart.
